Le boeu wagyu de Hokkaido, cuit à la perfection à Sapporo: Yakiniku Wagyu Kurosawa

Hokkaido est célèbre pour sa nourriture fraîche, son littoral abondant fournissant des fruits de mer fraîchement pêchés pour le donburi, et de vastes pâturages donnant aux bovins laitiers ou non un espace de pâturage. Alors que les voyageurs ayant un goût pour le bœuf wagyu de très haute qualité du Japon pourraient se diriger vers Kobe, il ne devrait vraiment pas être surprenant que Hokkaido soit un endroit idéal pour déguster les meilleures coupes du Japon. C’est pourquoi nous avons veillé à ajouter ce restaurant Sapporo à notre itinéraire lors de notre dernière visite sur l’île la plus septentrionale du Japon, et pourquoi nous le recommandons maintenant. Étant donné que le yakiniku (barbecue coréen) donne au dîner la possibilité de cuisiner chaque morceau de boeuf comme on le désir, nous avons eu un repas incroyable au Yakiniku Wagyu Kurosawa, en essayant toutes sortes de wagyu!

Le wagyu de Hokkaido



Pour commencer, l'une des premières choses qui nous a attirés dans le quartier des yakiniku de Sapporo a été la chance d'essayer le wagyu local! Shiraoi est une petite ville du sud de Hokkaido, et le wagyu de la région devient de plus en plus populaire ces dernières années, mais qui est encore rare à trouver en dehors de la région. Nous savions que nous devions nous arrêter à Yakiniku Wagyu Kurosawa (alias 焼 肉 和 牛 黒 澤, ou barbecue coréen Wagyu Kurosawa) pour goûter ce nouveau boeuf Shiraoi servi par un personnel des plus sympathiques!



Mais une fois arrivés, nous avons vite compris que le restaurant avait beaucoup de choses à offrir!

Certifié wagyu japonais authentique!

Le nom «wagyu» (和 牛) signifie littéralement «boeuf japonais», puisque 和 = japonais et 牛 = boeuf. Mais après avoir discuté avec le propriétaire de Yakiniku Wagyu Kurosawa, nous avons appris que pas n'importe quel boeuf du Japon peut être considéré comme wagyu! Tous les producteurs de bœuf qui souhaitent utiliser le prestigieux titre «wagyu» doivent se soumettre à des tests de qualité rigoureux. Seuls les meilleurs deviennent certifiés!
 



Donc, lorsque vous commandez du wagyu dans ce restaurant yakiniku, vous savez que vous aurez droit au meilleur, et ce n'est pas seulement limité au wagyu de Shiraoi. Parmi la grande variété d'assiettes et de plateaux de bœuf proposés par Kurosawa, une poignée d'entre eux sont parfaits pour une «dégustation» de wagyu, car ils ont également du bœuf de Shiraoi, du bœuf de Kobe (reconnu internationalement pour sa haute qualité) et du bœuf de Matsuzaka (souvent classé n ° 2). au Japon) le tout sur un même plateau.



Nous avons aussi vraiment aimé l'intérieur de la boutique, en particulier les cartes montrant d'où vient le célèbre wagyu au Japon, et une affiche expliquant chaque coupe de bœuf. Un outil d'apprentissage pratique, si vous apprenez japonais!



Le propriétaire nous a également dit avec une certaine frustration que certains restaurants dans les centres touristiques tenteront de tromper les clients en leur faisant passer du wagyu de bas rang, ou même le bœuf ordinaire tous les jours, pour du wagyu de haute qualité. C'est pourquoi le personnel de Yakiniku Wagyu Kurosawa est heureux de prouver, en un rien de temps, qu'il ne sert que le meilleur.



Ils sortiront même les papiers de certification officiels pour chaque coupe de wagyu qu'ils utilisent, afin que vous puissiez voir à quel point le bœuf que vous mangez est authentique. Là encore, une fois que nous avons mordu dans ldu vrai boeuf de Kobe au restaurant, nous n'avons vraiment eu aucun doute!
 

Faire sa sortie wagyu



Le restaurant essaie généralement de ne pas masquer la saveur du wagyu, car il y a déjà tellement de choses à savourer, mais nous avons appris que juste un peu de sauce ou de garniture faisait vraiment ressortir l'essence de la viande.



Nous avons commencé par trois coupes épaisses de différentes variétés.



Et même si elles étaient délicieuses servies telles quel, un peu de wasabi rajoutera un peu de piquan pour compléter le goût de la viande.



Cette poitrine de boeuf finement tranchée, à la coréenne, a été parfaitement cuite après quelques secondes sur les flammes du barbecue.



Il n'y a plus qu'à tremper le morceau de viande dans la sauce unique à Wagyu Kurosawa.

Compléter le repas avec les boissons et autres condiments



En discutant avec le personnel, ils ont admis que, puisque le wagyu est vraiment de haute qualité (et donc une indulgence plus chère), le moyen le plus pratique pour la plupart des voyageurs était de commander un échantillonn wagyu assez grand pour que chacun puisse comparer les différentes saveurs, puis de remplir dans l'estomac de tout le monde avec du bœuf normal non certifié (mais tout aussi savoureux) du Japon.

Là encore, vous trouverez d'autres plats d'accompagnement pour ajouter un peu de variété au repas! Ces crêpes coréennes, par exemple, étaient servies avec du boeuf haché ajouté au mélange avant la friture, ce qui les rendait encore plus délicieuses que la normale. Nous vous recommandons également de jeter quelques légumes locaux sur le gril à côté de la viande, pour un peu de couleur et une saveur d'Hokkaido des plus typiques.



Et pourquoi ne pas prendre un verre local au milieu de ce repas local? Nous avons choisi la bière Otaru, qui imite avec style la bière pilsner!



Avec une saveur fondante qui donne l'eau à la bouche rien qu'en y pensant, il ne faut absolument pas manquer la variété de wagyu disponible chez Yakiniku Wagyu Kurosawa. Venez en groupe ou en couple pour partager la fête et dégustez un repas luxueux la prochaine fois que vous visiterez Sapporo!

      Sapporo, in the south-western part of Hokkaido, is the prefecture's political and economic capital. It's also a hotspot for great food, known as a culinary treasure chest, and Sapporo is a destination for ramen, grilled mutton, soup curry, and of course Hokkaido's beloved seafood.

International skiiers are especially fond of Zao Onsen Ski Resort and Gassan Ski Resort, and in recent years visitors have been drawn to the area to see the mystical sight of local frost-covered trees. Some destinations are popular regardless of the season, like Risshakuji Temple, AKA Yamadera, Ginzan Onsen's nostalgic old-fashioned streets, and Zao's Okama Lake, all great for taking pictures. Yamagata is also the place to try Yonezawa beef, one of the top 3 varieties of wagyu beef.

    • Kyoto flourished as the capital of Japan between the years 794 and 1100, becoming a center for poilitics and culture, and to this day it's a great place for close encounters with Japanese history. The cobbled streets of Gion, the atmospheric road to Kiyomizudera Temple, Kinkakuji's golden walls and countless historic attractions, even Arashiyama's Togetsukyo Bridge―Kyoto is a place of many attractions. With new charms to experience throughout the seasons, travelers can't stop themselves from returning again and again.

Thanks to long years of economic activity, it's one of Japan's biggest cities, and Osaka's popular food culture earned it the nickname "The Kitchen of the Nation." To this day Osaka is the model of western Japan, and alongside historic structures like Osaka Castle, it also has major shopping malls like Umeda's Grand Front Osaka and Tennoji's Abeno Harukas. On top of historical spots like Dazaifu Tenmangu Shrine, travelers shouldn't miss Fukuoka's food scene, with motsu nabe (offal hotpot), mentaiko (spicy cod roe), and famous Hakata ramen―best eaten from a food stall in the Nakasu area of Hakata. Plus, it's full of all sorts of destinations for travelers, like trendy shopping centers, and the beautiful nature of Itoshima and Yanagawa.

      Kagoshima Prefecture played a major role in Japan's modernization as a backdrop for famous historical figures like samurais Saigo Takamori and Okubo Toshimichi, who pushed Japan out of the Edo era and into the Meiji. Because of that, Sengan-en Garden is just one of many historical destinations, and when it comes to attractions Kagoshima has plenty: the active volcano of Sakurajima, popular hot springs Ibusuki Onsen and Kirishima Onsen, World Heritage Site Yakushima Island, even what Japan calls the "island closest to heaven," Amami Oshima. Kagoshima might be found on the very southernmost tip of the southern island of Kyushu, but there's plenty to see.

      The island chain of Okinawa (沖縄) makes up the southernmost tip of Japan, which is why it's also the most tropical area in the country. Thanks to a history of independence and totally distinct political and cultural events, Okinawa has a unique culture, and remnants of the Ryukyu Kingdom are still visible all over the islands. Food, language, traditional dress, it's all a little different! It's also said to be the birthplace of karate.
